ICUMSA 600/1200 ICUMSA 600-1200 is a type of brown sugar that is 100% raw refined and produced after the first crystallization of sugar cane. It is thicker than white sugar and has a brownish color. Icumsa is an acronym for the International Commission for Uniform Methods of Sugar Analysis. ICUMSA 600-1200 is also known as raw brown cane sugar. When fully refined, raw brown sugar from sugar cane contains about 70 percent white sugar. Natural brown sugar contains more molasses, which gives it a higher mineral gratification.
